Vegan Baked Cheesy Zucchini Stacks

  • by

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Line a large baking sheet or baking dish with parchment paper or lightly grease it with olive oil.

Step 2: Prepare the Zucchini

Wash and dry the zucchini thoroughly. Cut them into rounds approximately ½ inch (1–1.5 cm) thick.

Place the rounds on a plate or baking tray and sprinkle lightly with salt. Let them sit for 10 minutes to release excess moisture, then pat them dry with paper towels.

This step helps prevent the zucchini stacks from becoming watery during baking.

Step 3: Season the Zucchini

In a large bowl, combine the zucchini rounds with olive oil, minced garlic, oregano, Italian seasoning, paprika, black pepper, and a little salt if needed.

Toss gently until all the pieces are evenly coated.

Step 4: Pre-Bake the Zucchini

Arrange the zucchini rounds in a single layer on the prepared baking sheet.

Bake for 10 minutes to soften them slightly and help remove excess moisture.

Remove the tray from the oven and allow the zucchini to cool briefly so they’re easier to handle.

Step 5: Prepare the Crispy Topping

In a small bowl, mix the breadcrumbs with 1 tablespoon of olive oil, vegan Parmesan-style cheese, and chopped parsley.

Stir until the breadcrumbs are lightly coated and evenly combined.

Set aside.

Step 6: Assemble the Zucchini Stacks

Arrange the zucchini rounds in small overlapping stacks of two or three slices, depending on their size.

Spoon a little tomato sauce over each stack, followed by shredded vegan mozzarella and a sprinkle of vegan Parmesan-style cheese.

For extra flavor, add a pinch of Italian seasoning between the layers.

Finish each stack with a small amount of the breadcrumb mixture.

Step 7: Bake Until Golden

Return the baking dish to the oven and bake for 15–20 minutes, until the zucchini is tender, the tomato sauce is bubbling, and the vegan cheese has melted.

For a crispier topping, switch the oven to broil for the final 1–2 minutes, watching carefully to prevent burning.

Step 8: Garnish and Serve

Remove the zucchini stacks from the oven and let them rest for 3–5 minutes.

Garnish with fresh basil leaves, chopped parsley, and red pepper flakes if desired.

Serve warm as a main dish, a side, or an appetizer.

Tips for Perfect Vegan Zucchini Stacks

Choose firm zucchini: Medium-sized zucchini are ideal because they hold their shape better during baking.

Remove excess moisture: Salting and drying the zucchini helps create a firmer texture and prevents watery tomato sauce.

Use a thick tomato sauce: A thick marinara sauce keeps the stacks flavorful without making them soggy.

Choose good melting vegan cheese: Different brands melt differently, so use a vegan mozzarella designed for cooking and baking.

Make the topping extra crispy: Mix the breadcrumbs with olive oil before sprinkling them over the stacks.

Don’t overcrowd the baking dish: Leave a little space between the stacks so heat can circulate evenly.
