Soft and Fluffy Milk Brioche Rolls – Easy Homemade Recipe

  • by

Step 1: Prepare the Warm Milk

Pour the warm milk into a large mixing bowl. Make sure the milk is warm but not hot, ideally around 100–110°F (38–43°C).

Add the sugar and yeast, then stir gently. Let the mixture stand for 5–10 minutes if using active dry yeast, until it becomes slightly foamy.

If you are using instant yeast, you can mix it directly with the flour instead.

Step 2: Add the Eggs

Add the two room-temperature eggs to the milk mixture.

Whisk everything together until the eggs are fully incorporated and the mixture looks smooth.

The eggs help give the brioche rolls their rich flavor, soft texture, and beautiful color.

Step 3: Combine the Dry Ingredients

In a separate large bowl, combine the all-purpose flour and salt.

Mix well to distribute the salt evenly throughout the flour.

Gradually add the flour mixture to the milk and egg mixture, stirring with a wooden spoon or spatula until a rough dough begins to form.

The dough may look slightly sticky at this stage. That is normal.

Step 4: Knead the Dough

Transfer the dough to a lightly floured work surface.

Knead for approximately 8–10 minutes by hand, or 5–7 minutes using a stand mixer fitted with a dough hook.

Add the softened butter gradually while kneading. Continue working the dough until the butter is fully incorporated.

The dough should become smooth, elastic, and soft.

Avoid adding too much extra flour, as this can make the finished rolls dry and heavy. A slightly tacky dough will usually produce softer bread.

Step 5: Let the Dough Rise

Place the dough in a lightly greased bowl and turn it once to coat the surface.

Cover the bowl with a clean kitchen towel or plastic wrap.

Leave it in a warm, draft-free place for approximately 1–1½ hours, or until the dough has doubled in size.

The rising time depends on your kitchen temperature, so use the dough’s size as your main guide.

Step 6: Divide and Shape the Rolls

Once the dough has risen, gently press it down to release excess air.

Transfer it to a work surface and divide it into 16 equal portions for medium-sized rolls, or 12 portions for larger rolls.

Shape each portion into a smooth ball by folding the edges underneath and gently rolling it against the work surface.

Arrange the dough balls in a lightly greased rectangular baking dish, leaving a little space between them so they can expand.

For the soft, connected appearance shown in the picture, place the rolls relatively close together.

Step 7: Allow the Rolls to Rise Again

Cover the shaped rolls loosely with a clean kitchen towel.

Let them rise for another 30–45 minutes, or until they look noticeably puffier.

This second rise is important because it helps create the light, fluffy texture that makes milk brioche so delicious.

Meanwhile, preheat your oven to 350°F (175°C).

Step 8: Prepare the Egg Wash

In a small bowl, whisk together one egg and one tablespoon of milk.

Once the rolls have finished rising, gently brush the tops with the egg wash.

Be careful not to press down on the delicate dough.

For an attractive bakery-style finish, sprinkle sesame seeds over the tops if desired.

Step 9: Bake Until Golden Brown

Place the baking dish in the preheated oven.

Bake for approximately 20–25 minutes, or until the rolls are puffed and their tops are a rich golden brown.

If the tops begin browning too quickly, loosely cover the rolls with aluminum foil for the remaining baking time.

The exact baking time will depend on the size of your rolls and your oven.

Step 10: Add a Soft, Buttery Finish

Remove the rolls from the oven and let them rest for a few minutes.

For an extra-soft crust, brush the warm tops with a little melted butter.

Allow the rolls to cool slightly before serving. They will have a beautiful golden exterior and a tender, fluffy interior.

Pull them apart while they are still warm and enjoy their soft, delicate texture.

Tips for the Softest Milk Brioche Rolls

Use warm, not hot, milk. Milk that is too hot can damage the yeast and prevent the dough from rising properly.

Measure the flour carefully. Too much flour can make the rolls dense. If possible, weigh your flour for the most consistent results.

Use softened butter. Butter should be soft enough to mix into the dough easily but not melted.

Allow enough rising time. The dough should become visibly larger and puffier before baking. A cold kitchen may require additional time.

Avoid overbaking. Remove the rolls when they are golden brown and cooked through to help preserve their moisture.

Brush with butter after baking. This simple step gives the crust a lovely sheen and helps keep it soft.

How to Store Milk Brioche Rolls

Store completely cooled rolls in an airtight container or sealed food bag at room temperature for up to 2–3 days.

To keep them longer, freeze the cooled rolls in a freezer-safe bag for up to 2–3 months.

When ready to serve, thaw them at room temperature and warm them in a low oven for a few minutes. You can also microwave an individual roll for approximately 10–15 seconds to soften it.

How to Serve Milk Brioche Rolls

These soft homemade rolls are delicious in many different ways.

  • Serve them warm with butter, honey, or your favorite jam.
  • Enjoy them with coffee, tea, or a glass of milk.
  • Fill them with cheese, eggs, or sliced turkey for breakfast sandwiches.
  • Serve them alongside soups, salads, or family dinners.
  • Use them as soft sandwich buns for lunch.

The result: Beautiful, golden milk brioche rolls with a delicate crust and a soft, fluffy center. Once you try making these at home, they may become a favorite for family breakfasts, weekend baking, and special gatherings.
