Sweet & Spicy Pineapple Cowboy Candy

Peel and core the pineapple, then cut it into small, bite-sized pieces.

If using canned pineapple, drain it very well before chopping.

Step 2: Prepare the jalapeños

Wash the jalapeños and remove the stems.

Slice them into thin rounds. For a milder version, remove the seeds and inner membranes. Leave some seeds in if you want a stronger kick.

Step 3: Make the sweet and spicy syrup

Add the sugar, apple cider vinegar, honey, red pepper flakes, salt, and lemon juice to a medium saucepan.

Bring the mixture to a gentle simmer over medium heat, stirring until the sugar completely dissolves.

Step 4: Add the pineapple and jalapeños

Stir the diced pineapple and sliced jalapeños into the syrup.

Bring everything to a gentle boil, then reduce the heat to medium-low.

Step 5: Simmer

Cook uncovered for approximately 20–30 minutes, stirring occasionally.

The pineapple should become tender while the syrup thickens into a glossy, sticky consistency.

Avoid overcooking, as the mixture will continue to thicken as it cools.

Step 6: Cool

Remove the saucepan from the heat and allow the pineapple mixture to cool for several minutes.

Transfer it to a clean glass jar and let it cool completely before covering and refrigerating.

Step 7: Serve

For the ultimate appetizer, place a block of softened cream cheese on a serving plate and spoon the pineapple cowboy candy generously over the top.

Serve with crackers, toasted baguette slices, or biscuits.

It’s also delicious alongside grilled chicken, pork, burgers, tacos, or roasted meats. The combination of juicy pineapple, fiery jalapeño, and sticky sweet syrup creates an incredible contrast of flavors in every bite.

Store refrigerated in a clean, sealed container and enjoy within about 1–2 weeks.
