Strawberry Cheesecake Fluff

  • by

Creamy cheesecake texture
Cream cheese and Greek yogurt create a rich, smooth base without requiring traditional cheesecake baking.
Fresh strawberry flavor
Real strawberries provide a naturally fruity flavor that makes the dessert taste bright and refreshing.
Protein-rich ingredients
Cottage cheese, Greek yogurt, and protein powder make this more substantial than ordinary fruit fluff.
Quick and no-bake
There is no oven required, making it an easy dessert for busy days.
Easy to portion
Individual cups make it simple to prepare servings ahead of time and control portions.
Common Mistakes to Avoid
Not draining excess strawberry liquid — Very juicy berries can make the fluff watery, so pat chopped strawberries dry before adding them.
Using cold cream cheese — Softened cream cheese blends more smoothly and prevents lumps.
Overmixing the whipped topping — Fold gently to preserve the airy texture.
Adding too many strawberries at once — Excess fruit can thin the mixture and reduce its fluffy consistency.
Required Equipment
Blender or food processor — Smooths the cottage cheese into a creamy base.
Large mixing bowl — Provides enough space for gently combining all ingredients.
Electric hand mixer — Creates a smooth cream cheese mixture quickly.
Rubber spatula — Gently folds in strawberries and whipped topping.
Measuring cups and spoons — Keeps portions and nutrition estimates consistent.
Individual dessert cups — Make serving and meal preparation convenient.

📝 Ingredients
Strawberry Cheesecake Fluff
1 cup (225 g) low-fat cottage cheese
1 cup (245 g) plain nonfat Greek yogurt
4 oz (113 g) reduced-fat cream cheese, softened
1 scoop (30 g) vanilla whey protein powder
1½ cups (225 g) fresh strawberries, finely chopped
⅓ cup (65–70 g) granulated erythritol or monk-fruit sweetener
1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
½ cup (30 g) light or sugar-free whipped topping
¼ teaspoon salt
Optional Topping
½ cup sliced fresh strawberries
2 tablespoons crushed sugar-free graham-style crumbs
1 tablespoon unsweetened whipped topping
Ingredient note: Choose ripe but firm strawberries and pat them dry after washing. For a lower-sugar option, use unsweetened or sugar-free whipped topping.

Directions
1. Prepare the Strawberries
Wash and thoroughly dry the strawberries.

Remove the stems and finely chop 1½ cups of strawberries.

Pat them gently with a paper towel to remove excess moisture.

2. Blend the Cottage Cheese
Place cottage cheese in a blender or food processor.

Blend on medium-high speed for 30–60 seconds, until completely smooth.

High-protein tip: Blending the cottage cheese helps create a cheesecake-like texture without leaving visible curds.

3. Make the Cheesecake Base
Add the blended cottage cheese, Greek yogurt, softened cream cheese, protein powder, sweetener, vanilla, lemon juice, and salt to a large bowl.

Beat on low-medium speed for 1–2 minutes, until smooth and creamy.

The mixture should be thick with no visible cream cheese lumps.

4. Add the Strawberries
Gently fold the chopped strawberries into the cheesecake mixture.

Use a rubber spatula and make approximately 8–10 gentle folds.

Do not vigorously stir, as this can release excess strawberry juice.

5. Fold in the Whipped Topping
Add the whipped topping.

Fold gently from the bottom upward until evenly incorporated.

The finished mixture should look light, fluffy, and pale pink with visible strawberry pieces.

6. Portion the Fluff
Divide the mixture evenly among 6 small dessert cups or containers.

Smooth the tops with the back of a spoon.

7. Chill
Cover the cups and refrigerate for at least 2 hours.

For an even firmer consistency, refrigerate for 3–4 hours.

8. Garnish and Serve
Just before serving, top each portion with a few sliced strawberries.

Add a small sprinkle of crushed sugar-free graham-style crumbs if desired.

Serve cold.
