Spanish Tortilla Just Like in Spain

1. Prepare the potatoes

Peel the potatoes and cut them into thin slices, roughly 3–4 mm thick. Slice the onion thinly as well.

2. Gently cook the potatoes

Heat the olive oil in a large nonstick skillet over medium-low heat. Add the potatoes and onion and season with salt.

Cook gently for about 15–20 minutes, stirring occasionally, until the potatoes are completely tender but not deeply browned.

3. Drain the potatoes

Transfer the cooked potatoes and onion to a colander and let the excess oil drain. Reserve a little of the oil for the pan.

4. Combine with the eggs

Beat the eggs in a large bowl with a little salt. Add the warm potatoes and onion and gently mix.

Let the mixture rest for 5 minutes. This allows the potatoes to absorb some of the egg and creates a softer tortilla.

5. Cook the tortilla

Heat about 1–2 tablespoons of the reserved oil in a nonstick skillet over medium heat.

Pour in the potato-and-egg mixture and spread it evenly. Cook for about 3–4 minutes, occasionally shaking the pan gently.

The bottom should become golden while the center remains slightly soft.

6. Flip carefully

Place a large plate over the skillet and carefully flip the tortilla onto the plate.

Slide it back into the pan to cook the other side for another 2–3 minutes.

7. Keep the center creamy

Don’t cook it until completely firm. The residual heat will continue cooking the eggs after you remove the tortilla.

For that classic Spanish texture, the center should be set but still soft and moist.

8. Rest and serve

Transfer the tortilla to a plate and let it rest for 5–10 minutes before slicing.

Serve warm or at room temperature with a simple salad, crusty bread, or roasted vegetables.
