1. Soak the skewers
If using wooden skewers, place them in water and soak for at least 30 minutes. This helps prevent them from burning during cooking.
2. Cut the chicken
Cut the chicken breasts into evenly sized bite-size pieces, about 1–1½ inches each.
Try to keep the pieces similar in size so they cook evenly.
3. Make the marinade
In a large bowl, combine mayonnaise, olive oil, lemon juice, minced garlic, paprika, garlic powder, onion powder, oregano, black pepper, and salt.
Whisk until smooth.
4. Marinate the chicken
Add the chicken pieces to the marinade and toss until every piece is well coated.
Cover and refrigerate for at least 30 minutes. For even more flavor, marinate for 2–4 hours.
5. Prepare the breading
In a shallow bowl, combine the breadcrumbs, panko, paprika, garlic powder, dried parsley, black pepper, and salt.
Mix well.
6. Thread the chicken
Remove the chicken from the refrigerator.
Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece.
7. Coat with breadcrumbs
Roll each chicken skewer in the breadcrumb mixture, gently pressing the crumbs onto the chicken so they stick well.
Make sure the chicken is generously coated.
8. Cook the skewers
Heat a little oil in a large skillet over medium heat.
Place the skewers in the pan without overcrowding them.
Cook for about 4–5 minutes per side, turning regularly, until the coating is golden brown and the chicken is cooked through.
The chicken should reach an internal temperature of 165°F (74°C).
9. Make them extra crispy
For an even crispier finish, place the cooked skewers on a baking sheet and bake at 425°F (220°C) for about 5–8 minutes.
You can also use an air fryer at 400°F (200°C) for approximately 10–14 minutes, turning halfway through.
10. Serve
Transfer the crispy chicken skewers to a serving plate.
Garnish with fresh parsley and serve with lemon wedges for a bright, fresh finish. 🍋
