1. Cook the bacon
Place the bacon in a large skillet over medium heat. Cook for about 4–6 minutes per side, turning occasionally, until golden brown and crispy.
Transfer the bacon to a paper towel-lined plate to drain excess grease.
2. Toast the bread
Spread butter over one side of each slice of bread.
Place the bread butter-side down in a clean skillet and toast over medium heat for 2–3 minutes per side, until lightly golden and crisp.
3. Make the spread
Mix the mayonnaise and Dijon mustard in a small bowl.
Spread the mixture evenly over one side of each toasted bread slice.
4. Build the sandwich
Place lettuce and tomato on one slice of bread.
Add the crispy bacon, arranging the slices evenly so every bite has plenty of bacon.
Add cheddar cheese if desired, then season lightly with black pepper.
5. Finish the sandwich
Top with the second slice of toasted bread and gently press everything together.
For an extra-crispy sandwich, place it back in the skillet for about 1 minute per side.
6. Slice and serve
Cut the sandwich diagonally and serve immediately while the bacon is still warm and crispy.
